Winner's Interview

“Sustainability is not just a concept for us at 1 Hotel Mayfair; it is the foundation on which we were built.”
Hear from 2024 AA Sustainable Award winner: 1 Hotel Mayfair, how it felt to win, push through challenges, and how they’re staying true to their mission

How did it feel to win the AA Sustainable Award in 2024?
It was an immense honour for the entire team. Sustainability is not just a concept for us at 1 Hotel Mayfair; it is the foundation on which we were built. To have our efforts recognised by such a respected organisation is a true testament to the passion and dedication of every colleague. It has inspired us to keep pushing boundaries and to continue leading by example in the luxury hospitality sector.

Why are the AA Awards so important for our industry?
The AA Awards celebrate the very best in hospitality, shining a spotlight on excellence and innovation. They encourage us all to raise the bar, share best practices, and inspire one another. In a fast-moving industry, this recognition not only celebrates achievement but also fuels healthy competition, collaboration, and continued improvement.

How have things been for you in these challenging few years for hospitality?
The past few years have tested our industry in ways we could never have predicted. At 1 Hotel Mayfair, we have responded with resilience, adaptability, and creativity – always putting our guests and our people first. While the challenges have been significant, they have also strengthened our sense of purpose and reinforced the importance of sustainable, mission-led hospitality.

Apart from 1 Hotel Mayfair, where is your favourite place to dine or stay in the UK?
The UK is full of exceptional dining and hospitality experiences, so it is a difficult choice. I particularly admire properties that combine outstanding service with a sense of place and sustainability, an incredible experience for me is at L’enclume in Cartmel, which is the perfect combination of local farm to fork cuisine set in the beautiful Lake District hamlet setting.

What’s next for 1 Hotel Mayfair, any future plans?
Our goal is to keep evolving while staying true to our mission. We are looking at expanding our sustainability initiatives even further, deepening our partnerships with local suppliers, expressed by our ‘meet the maker’ initiative on social channels and through the menus in the hotel. To further enhance the connection to nature experience and our net zero waste program through unique initiatives, for example, our welcome cards and menu paper made from our reject-linen. We will continue to innovate in ways that surprise and delight, while always keeping people and the planet at the heart of what we do.

Why should people attend the AA Awards this year?
The AA Awards bring together the most inspiring people in hospitality: chefs, hoteliers, restaurateurs, and innovators. It is an evening that celebrates hard work, creativity, and passion. For anyone who loves this industry, it is a chance to connect, share ideas, and honour the remarkable achievements that make hospitality in the UK so vibrant.

Have you got a message for the winners and finalists on the night?
